Grilled Cheese Party!

A couple weeks ago I got the largest delivery of Cabot Cheese to my apartment. Cabot will frequently send us a very generous shipment of their delicious cheeses, but the latest shipment will probably get me through, well, the rest of my life. Exhibit A, and this is only some of it:


I really loved the idea of having my fair selection of my favorite cheese at my disposal, but at the same time, I felt like I should share with friends! And how perfect because did you know that April is National Grilled Cheese month?! I actually only found out about this recently but you better believe I’ll be celebrating every April. And May, and June, and.

My roommate, Liza, was planning on having a couple of friends over last Saturday night to extend her birthday week by watching a movie, sipping some wine, and just general chatting. So naturally we decided to turn it into a Grilled Cheese Party (something that will now happen more often than not!). At first, I was going all crazy and trying to find recipes online for unique combinations. I also wondered if I should make just one kind or a variety of “samples”. I decided to go for the variety because I figured it would be a good way for our friends to discuss each grilled cheese and what they liked/didn’t like about it. Conversations and debates about food are always welcome in my house 🙂

Once I decided on making a variety, I just had to figure what kinds to make. I found one recipe from the Cabot website that stood out and decided I would definitely include it. Then something came over me. I remembered our hamburger class at the Four Seasons last week and how we were basically put on the spot to come up with an original hamburger creation. I recalled how nervous I felt but how confident I was at the end of the class when I actually created a solid hamburger. I mean, I eat food all the time, and at this point I know what goes and what doesn’t go. Why do I need to follow recipes for all of my grilled cheese?! I decided to just have fun with it go with what I knew would be good. Plus, you can’t really go wrong with melted cheese and bread. All the toppings are just extra 😉

Also, I didn’t snap photos of all of the ingredients lined up because this was all an experiment 😉

The first up is the Grilled Cabot Cheddar & Roasted Pepper Grilled Cheese

I thought an herbed butter on the bread would work perfectly with this particular sandwich, so I roughly chopped some herbs (you can use whatever you’d like!) and whipped them into some softened butter.



For the inside of the sandwich, I used yellow, green, and red peppers and just roasted them myself instead of buying a jar. Nothing like home-roasted peppers 🙂


Here’s what you need (I put my own spin on this one):

• about 1/4 cup roasted peppers, chopped
• 2 tablespoons mayonnaise
• 1 teaspoon white wine vinegar
• 1/2 teaspoon hot sauce
• 1 cup Cheddar Cheese, grated
• 1/2 cup Cabot Jalepeno cheddar, grated
• 1 tablespoon finely chopped green onion
• 8 slices bread of choice
• 1 large tomato, thinly sliced

Here’s what you do:

• In a medium bowl, mix together your mayonnaise, vinegar, and hot sauce. Add cheese, green onion, and roasted peppers. Stir gently to combine all ingredients.

• Coat one side of each slice of bread with your herbed butter. Arrange 4 slices coated-side-down on a cutting board. Spread each with a good amount of your cheese mixture and top with tomato, followed by remaining bread, coated-side-up.

• Heat a large skillet over medium heat. Add the sandwiches and cook, making sure to turn half way, until the bread is golden brown and the cheese has melted.

Pear and Prosciutto Grilled Cheese


Here’s what you need:

• 4 slices of prosciutto, thinly sliced, if not shaved
• 4-6 slices of cheddar cheese
• 1/4 cup of thinly sliced pears
• spring mix
• unsalted butter
• bread of choice

Here’s what you do:

• Butter each piece of bread

• Coated-side-down, begin layering cheddar, prosciutto, pear, spring mix, followed by another piece of cheddar just to keep everything together!

• Heat a large skillet over medium heat. Add the sandwiches and cook, making sure to turn half way, until the bread is golden brown and the cheese has melted.

Bacon and Avocado Grilled Cheese


Here’s what you need:

• 4-6 slices of cooked bacon
• 4-6 slices of cheddar cheese
• spring mix
• unsalted butter
• bread of choice

Here’s what you do:

• Butter each piece of bread

• Coated-side-down, begin layering cheddar cheese, bacon, avocado, spring mix, followed by another piece of cheddar.

• Heat a large skillet over medium heat. Add the sandwiches and cook, making sure to turn half way, until the bread is golden brown and the cheese has melted.

Since I was hosting a Grilled Cheese party, I arranged each variety on it’s own plate and let everyone dig in! The favorites of the night were definitely the Pear and Prosciutto along with the Roasted Pepper one. And you can never ever go wrong with a bacon and avocado grilled cheese. It’s kind of the best of the best. Also, I think I ate my weight in grilled cheese that evening. Oof.


After we all went into food comas, we watched a movie (For Colored Girls… which was really good!), and dug into the homemade Strawberry Shortcake Ice Cream that Laura made. This ice cream had actual chunks of cake in it. CAKE, I TELL YOU!

It deserves a moment of silence.



Okay. That’s enough time, I think. I think. Word on the street is Laura makes unique ice cream concoctions about 12,000 times a week. Thankfully she lives about 2 feet from me because I plan on being her guinea pig this summer. I haven’t told her that yet, though 😉 Also, she left that huge container of ice cream in our freezer. It’s been my midnight snack all week. Shhhh.

If you could host any kind of food-tasting party, what would it be? I think grilled cheese was definitely one of my top 5 choices! Followed by donuts, pies, ice cream, bacon, hamburgers… I mean, this list could clearly go on.

    This is so much fun 🙂 I love the idea!! The Pear and Prosciutto Grilled Cheese would be Josh’s favorite. He is a huge fan of both pears and prosciutto and obviously we both LOVE cheese. Glad you guys had fun. I’d love to do a make your own parfaits party 🙂

    Every one of these combos looks amazing. Grilled cheese is one of my toptoptop favorites. I’ve even asked the caterer for our wedding to have grilled cheese as a passed app!

    Those variations all look delicious! I think I would go for the latter because anything with bacon just calls my name. I too have been trying to make some new variations on grilled cheeses (I love the 3 dollar “snack” cheese basket from whole foods,) but it is tough to pull myself out of a firmly entrenched kraft singles habit.

    I’m thinking about having a birthday party for my husband featuring make-your-own grilled cheese sandwiches and maybe a terrific soup. Saw the Rachel Ray segment on GMA this week. Would you just cook them on the stove or try and have some electric sandwich makers?

    @carol that sounds like such fun! I made mine using a grill pan on the stovetop. If you have an electric sandwich maker, that could work as well! But if not, I think just using a large skillet you’d be able to make 3-4 sandwiches at a time 🙂 Have a ton of fun! [chels]
