Mango Ginger Smoothie at the Boston Center for Adult Education

Remember last week when we told you we spent the day in the kitchens at the Boston Center for Adult Education (BCAE)? Well, we didn’t just tour around the facility; we got to take full advantage of all the kitchens! And we definitely did.

After touring the BCAE and chatting it up with Dustin about the cooking classes (of which I want to take ALL!), we got down to cooking. Our first delight? We decided to make a mango ginger smoothie. Why? Well, smoothies are delicious, first of all. But they’re also kind of hard to blog about because photographs can be tough. Unless, of course, you have a wide open, well-lit space in which to take those photos. And nice clear glass in which to put the smoothie. Done and done. Plus, we thought it would be fun to shoot a video to show you exactly how we did it. OK, so you basically just put everything in the blender, but still 🙂

Mango Ginger Smoothie (about 2 servings):

  • 1 ripe mango and 1 banana (or 2 mangos if you don’t like banana)
  • 2 pieces crystallized ginger, about 1 oz. (or as much as you want!)
  • 1 C low-fat buttermilk
  • 1 8-oz. container low-fat vanilla yogurt
  • Handful of chipped ice

Just a quick tip for slicing your mango before we begin. The best way to do it is to stand the mango and slice flesh of both sides of pit. Then lay each half on a cutting board and cut the flesh in a cross-hatch pattern with the tip of your knife. Push on the skin side and turn inside out, so the mango fruit pops out. Like so:

Then slice it off the skin. And cut the remaining flesh (I hate that word!) from around the pit.

We also may have thrown some extra crystallized ginger pieces in our smoothies because we’re both obsessed with ginger. It was perfect. And since neither of us really had breakfast, well needed!

  12. everytime i used to make a mango i would insist it had mango in it! the funny thing is that ive never once cut my mango the proper way like this.. ive still stuck to the old slobbery method of eating it like an apple lol

    Ooooo – love this post! LOVE the idea of crystallized ginger in a smoothie (I too am obsessed with ginger!), especially with mango. Delish!!! And love your mango-cutting tutorial. Great post! I’ve been formulating a new smoothie idea in my head, I may just have to make it for breakfast tomorrow and blog about it – you’re inspiring me… 🙂

  18. i love smoothies! any kind really. when i make a smoothie at home it always has a banana and some other fruits in it. at a smoothie place, usually w/o a banana. i don’t know. i’m weird like that. and i adore those glasses! so pretty and fancy!

    Mango and ginger sounds like a wonderful combination!! I tried watching the video but the sound wasn’t really cooperating with my laptop. Sad. I’m definitely going to try this out in these last couple days of summer though!
