One of my favorite things about pancakes is that there are so many ways to make them. So many delicious ways.
I have lots of pancake recipes on my blog; some sweet and some savory, some made from scratch and some made from boxed mix.
Today I'm sharing a homemade sweet pancake recipe that is sure to make your whole family happy on a weekend morning!
🥛 What is sweet cream?
Well, that depends on who you ask! Traditionally, sweet cream refers to fresh, unfermented cream. It's called "sweet" to distinguish it from sour or cultured cream, but doesn't actually have any added sugars in it. Sweet cream does have a mildly sweet flavor due to the lactose (milk sugar) and extra richness because of the high fat content.
However, these days, you may know sweet cream as the mixture
They froth it up to turn it into a cold foam, but the liquid mixture can also be used as an ingredient in anything from drinks to pancakes. Hence, these sweet cream pancakes.

❤️ Why you'll love this recipe
While I'll always be a big fan of buttermilk pancakes, I am also now a lover of sweet cream pancakes, too.
These pancakes are just as easy to make as any pancake recipe. The sweet cream requires just 3 ingredients and can be mixed and stored in your fridge ahead of time.
And the flavor and texture of the pancakes is absolutely incredible! The fat in the sweet cream adds a lot of moisture and richness and actually makes each bite feel more luxurious than the average pancake.
Sweet cream pancakes are also more soft and tender than buttermilk pancakes since the higher fat content limits the gluten production.
These are also perfect for anyone who doesn't like the tartness that buttermilk gives to pancakes.
I make my sweet cream with vanilla simple syrup to enhance the flavor and sweetness of the pancakes and highly recommend it!

🗒 Ingredients
These sweet cream pancakes use pretty traditional basic pancake ingredients. Here's everything you need (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- All-purpose flour
- Granulated sugar
- Baking powder
- Salt
- 2% milk
- Heavy cream
- Vanilla simple syrup: store-bought or homemade
- Large eggs
- Butter or cooking spray: for pan
You don't need any special equipment to make homemade pancakes, but I do highly recommend getting a good griddle as they can make all the difference in pancake making!
👩🍳 How to make sweet cream
If you opt to make these pancakes with my homemade
All you need to do is add milk, cream, and vanilla syrup to a large jar and shake well to combine.
If you don't have a mason jar, you can stir everything together in a bowl.
I like to make some extra sweet cream to turn it into a cold foam for topping the pancakes with.
To turn it into a cold foam great just use an electric frother, hand mixer, or blender, to froth, mix, or blend until the mixture turns into a foam.
Alternatively, you can shake the mixture vigorously in mason jar until it's nice and frothy.
🥞 How to make sweet cream pancakes
Now you'll make these deliciously sweet and tender pancakes just like you'd make any other pancake recipe!
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a small bowl, lightly whisk eggs.
Add sweet cream mixture and whisked eggs to the dry ingredients and stir until they’re just combined, taking care not to over-mix. Some lumps are OK. Let batter rest for 5-10 minutes.
Heat a griddle or skillet over medium heat and brush lightly with a little butter or cooking spray.
Pour about ⅓ cup of batter onto it. Cook for about 2 minutes, until bubbles start to form on the surface.
Flip and cook for another minute, until golden brown.
I like to sprinkle some confectioners' sugar on my stack of pancakes. But you can serve these however you want!
I think they're best with the powdered sugar and then a little sweet cream foam spooned on.
Whipped cream works for a good substitute.
And maple syrup is always welcome. But honestly, these pancakes are so sweet and tender, you don't even need any.
Sweet cream pancakes have suddenly become my new go-to pancake recipe and they're the perfect alternative to buttermilk pancakes.
🙋♀️ What if I want traditional sweet cream pancakes?
If you came to this post hoping for a traditional sweet cream pancake recipe, that's no problem at all!
Instead of mixing the 2% milk, heavy cream, and vanilla syrup together, you can simply add 2 ¼ cups of heavy cream to the batter.
Or if you want a lighter sweet cream pancake that's still more traditional, mix 2% milk and heavy cream together and leave out the syrup (which is simply meant to sweeten the pancakes).
📦 Can I use pancake mix?
Do you prefer to make your pancakes with boxed mixes? Well, you can turn any pancake mix into sweet cream pancakes if the mix calls for milk.
Just replace the milk the recipe calls for with the sweet cream mixture (or simple heavy cream).
You can also use sweet cream in this muffin mix pancake recipe and this cake mix pancake recipe, but I recommend leaving out the syrup since the mixes already have enough sugar in them and make sweeter than average pancakes.
🎉 Variations on recipe
You really can customize these sweet cream pancakes the same way you would any of your other favorite pancake recipes. Here are some of my favorite ways:
- Add fruit, like blueberries, sliced bananas, chopped strawberries, etc.
- You can experiment with different sweet cream flavors, like chocolate sweet cream, pumpkin sweet cream, pistachio sweet cream, etc.
- Add a little lemon juice and lemon zest
- Add cinnamon, nutmeg, or pumpkin pie spice
- Add chocolate chips or white chocolate chips
- Add cocoa powder to the batter for chocolate pancakes
- If you like the sweet and savory flavor combination, you can add crumbled bacon, cooked corn, and/or shredded cheese to the pancakes
There are endless ways to make and enjoy sweet cream pancakes for a fabulous weekend brunch.

Sweet Cream Pancakes
Ingredients

- 1 ½ cups 2% milk
- ½ cup heavy cream
- ¼ cup vanilla syrup store-bought or homemade (see notes for substitution if you don't have syrup)
- 2 large eggs
- Butter or cooking spray, for pan

- Add milk, cream, and vanilla syrup to a large jar and shake well to combine (if you don't have a jar, you can stir together in a bowl).
- In a small bowl, lightly whisk eggs.
- Add sweet cream mixture and whisked eggs to the dry ingredients and stir until they’re just combined, taking care not to over-mix. Some lumps are OK. Let batter rest for 5-10 minutes.

Notes
- If you don't have vanilla syrup, you can add 1 tablespoon vanilla extract to the sweet cream and whisk an additional ¼ cup sugar (or however much you want) to the dry ingredients.
- To turn sweet cream into a cold foam great for topping pancakes, you'll want to make a little extra cold cream. I recommend adding an additional ¾ cup 2% milk, ¼ cup heavy cream, and 2 tablespoon vanilla syrup to jar or bowl. When ready to turn into a foam (right before serving), add the sweet cream to an electric frother, blender, or bowl with hand mixer and froth, mix, or blend until the mixture turns into a foam. Alternatively, you can shake the mixture vigorously in a mason jar until it's frothy.
- If you'd prefer to make traditional sweet cream pancakes, simply mix 2 ¼ cups of heavy cream into the batter and completely omit the 2% milk and vanilla syrup.
