Bacon, Egg,  & Cheese Crepes

Want a different, more delicious spin on an egg and cheese sandwich? Make these Bacon, Egg, and Cheese Crepes for the best breakfast ever!

Makes:  4 servings Prep Time: 10 mins Cook Time: 20 mins

Crepe Ingredients:

– All-Purpose Flour – Granulated Sugar – Dried Parsley – Salt – Pepper – Whole Milk – Eggs – Melted Butter

Filling Ingredients:

– Eggs – Garlic Powder – Dried Parsley – Salt – Pepper – Butter – Crispy Bacon – Shredded Cheddar Cheese

Put flour, sugar, parsley, salt, pepper, milk, eggs, & butter in blender.

Blend Ingredients

Process until smooth. Let rest for 30 mins (you can skip this if you're in a rush).

Heat 10-inch nonstick skillet over medium. Coat with butter. Pour about ⅓ cup batter in pan & gently tilt & swirl until batter evenly coats the bottom.

Cook Crepes

Let cook for 1 ½-2 mins until crepe is turning golden on bottom Use fingers or spatula to pull edges up & flip. Cook for another min before removing crepe from pan to a plate. Continue with batter.

In a medium bowl, whisk eggs, garlic powder, dried parsley, salt, & pepper.

Scramble Eggs

Add butter to large skillet over medium-low & pour eggs in. Let sit for a couple mins until they start to set & firm up at edges. Using a spatula, pull eggs in from edges to middle of the pan. Continue until eggs are cooked.

Cook bacon until nice and crispy.

Top center of each crepe with scrambled eggs, crumbled bacon, & cheese.

Fold or roll crepes.
