With Baileys Hot Fudge Sauce
Baileys Ice Cream
Baileys Ice Cream is an easy-to-make & creamy boozy ice cream perfect on St. Patrick's Day or any time. Drizzle with Baileys hot fudge sauce!
Makes: 1 1/2 quarts Prep Time: 40 mins Chill Time: 8 hours
Ingredients:
– 1 ½ cups whole milk – ¾ cup granulated sugar – ¼ tsp salt – 4 large egg yolks – 2 cups heavy cream – ⅓ cup Baileys Irish Cream
Bailey's Hot Fudge Sauce Ingredients:
– ½ cup cream – 3 Tbsp corn syrup – 2 Tbsp cocoa powder – ¼ tsp salt – 4 oz. milk chocolate, roughly chopped – 2 Tbsp Baileys Irish Cream – 1 Tbsp butter
Heat milk, sugar, & salt. Stir until it reaches the point of simmer.
Make Base
Lightly whisk egg yolks in small heat-proof bowl.
Make Base
Pour half of warm milk into the bowl with yolks, whisking while you do so.
Make Base
Pour mixture back into the saucepan with the rest of the milk.

Cook over low heat, stirring, until it thickens enough to coat back of the spoon and/or reaches 160 degrees.

Pour heavy cream into a separate large bowl.

Strain egg/milk mixture into the heavy cream and stir to combine.

Stir in Baileys Irish Cream.
Make Base
Cover with plastic wrap & place in fridge for at least 4 hours.
Chill Base
Process in ice cream maker according to manufacturer’s directions.
Process Ice Cream
Scoop ice cream in airtight containers & place in the freezer for another 4+ hours.
Chill Ice Cream
Add cream, corn syrup, cocoa powder, salt, & 1/2 chocolate to saucepan &d bring to a boil.
Make Fudge Sauce
Lower heat to a simmer and cook for about 5 minutes, stirring occasionally.
