– Pancake mix – Unsalted butter – Granulated sugar – Large eggs – Mashed ripe banana – Vanilla extract

How can you make banana bread with pancake mix?

Most pancake mixes are simply made up of flour, baking powder, sugar, and salt. So, if you're using a pancake mix to make banana bread, you have 3 ingredients in one (you'll want to add more sugar).

What Kind of Pancake Mix to Use?

You can use any brand of pancake mix for this banaan bread! I've tested it with both Annie's Organic and Bisquick, but you can also use Aunt Jemima (Pearl Mill), Krusteaz, Hungry Jack, & more.

Preheat oven to 350 degrees and lightly butter a 9x5" metal loaf pan.

Prep Recipe

In bowl of an electric mixer or in large bowl with hand mixer, beat butter until light & fluffy, 2-3 mins.

Make Batter

Add sugar & beat until well blended.

Beat eggs in one at a time. Add mashed bananas & vanilla & mix until combined. Batter may look a bit lumpy.

With mixer on low speed, beat in pancake mix until just combined, taking care not to over-mix.

Pour into prepared loaf pan.


Bake 35-45 mins, until edges are turning golden & toothpick inserted into center comes out clean.


 Turn out onto a rack & cool before slicing.
