Cajun Salmon Pasta

This easy-to-make Cajun Salmon Pasta is packed with Cajun flavors, a delightfully light creamy sauce, and lots of veggies and salmon!

Makes:  4 servings Prep Time: 10 mins Cook Time: 20 mins

Ingredients:

– Fettuccine or pasta shape of your choice – Olive oil – Cajun seasoning: Store-bought or homemade mix – Salmon – Onion – Red bell pepper – Garlic – Fire-roasted tomatoes – Heavy cream – Scallions, for garnish – Parsley, for garnish

Add pasta to a large pot of salted boiling water & let cook according to package, until just al dente. Drain, reserving ½ cup of the pasta water.

Cook Pasta

While pasta is cooking, pat salmon dry and season with about 1 Tbsp of Cajun seasoning.

Season Salmon

Add olive oil to large skillet over medium heat. Add salmon skin-side up & cook for 3-5 mins. Flip & cook for 3-4 mins, until salmon is flaky. Move to a plate & set aside.

Cook Salmon

Add remaining olive oil to skillet. Aadd onions & pepper. Cook for about 4 mins until veggies are softening. Add garlic, remaining cajun seasoning, & salt & cook for another minute.

Cook Veggies

Add diced tomatoes to skillet, along with ¼ cup of the reserved pasta water & bring to a simmer. Scrape up brown bits from bottom of the pan. Let cook, stirring occasionally, for 3 mins to reduce liquid.

Cook Veggies

Add heavy cream to skillet & allow the sauce to return to a gentle simmer. Simmer for about 3 mins to let sauce thicken.

Add Cream

Add pasta to skillet with scallions & parsley & toss to coat. Flake salmon into bite-sized pieces & gently toss with pasta. Add more pasta water to thin out sauce if needed.

Finish Dish

Serve Cajun salmon pasta topped with additional chopped parsley & scallions, if desired.
