– Fettuccine or pasta shape of your choice– Olive oil– Cajun seasoning: Store-bought or homemade mix– Salmon– Onion– Red bell pepper– Garlic– Fire-roasted tomatoes– Heavy cream– Scallions, for garnish– Parsley, for garnish
Add olive oil to large skillet over medium heat. Add salmon skin-side up & cook for 3-5 mins. Flip & cook for 3-4 mins, until salmon is flaky. Move to a plate & set aside.
Add remaining olive oil to skillet. Aadd onions & pepper. Cook for about 4 mins until veggies are softening. Add garlic, remaining cajun seasoning, & salt & cook for another minute.
Add diced tomatoes to skillet, along with ¼ cup of the reserved pasta water & bring to a simmer. Scrape up brown bits from bottom of the pan. Let cook, stirring occasionally, for 3 mins to reduce liquid.
Add pasta to skillet with scallions & parsley & toss to coat. Flake salmon into bite-sized pieces & gently toss with pasta. Add more pasta water to thin out sauce if needed.
