Caramelizing figs brings out their natural sugars & leaves you with a deeply sweet fruit to snack on or use as an ice cream topping.
Makes: 24 Fig Halves Prep Time: 10 mins Cook Time: 20 mins
In a large shallow bowl, stir together sugar & salt. Press cut side of each fig into the sugar mixture to coat.
Heat skillet over high & add figs, cut side down. Cook until sugar & juices caramelize, 3-4 mins.. As figs caramelize, turn them over.
Remove skillet from heat & add balsamic vinegar. Return to heat & cook to reduce vinegar, roughly 30 seconds, scraping up any caramelized bits on the bottom of pan.
Remove from heat again & add butter & lemon juice, gently swirling to combine. Serve now or cool to room temp.
I love these caramelized figs best when served over vanilla ice cream! They're also delicious over yogurt or all on their own!
