– 24 Carrot Cake Oreo cookies – 6 oz. cream cheese, room temp – 1 tsp vanilla – ¼ tsp cinnamon – ⅛ tsp nutmeg – ⅛ tsp ginger – 10 oz. White Chocolate Wafers/chips

Oreo truffles are always delicious, but these Carrot Cake Oreo Truffles take truffles to a new level and will make you feel like spring is in the air!
Makes: 16 Prep Time: 15 mins. Freeze Time: 45 mins.
Place Carrot Cake Oreo cookies in a food processor.
Bend cookies to fine crumbs.
Beat together cookie crumbs, cream cheese, vanilla, cinnamon, nutmeg, & ginger until well combined.
Roll mixture into golf ball sized balls on place on a parchment-lined cookie sheet. Place in freezer for 30 mins.
Melt white chocolate in double boiler or in microwave.
Dunk Oreo balls to coat & return to baking sheet. Top with sprinkles. Return to freezer for another 15 mins.
