Chai Carrot Cake Scones
Chai Carrot Cake Scones combine everything you love about carrot cake into a perfectly spiced treat that's delicious for dessert or breakfast!
Makes: 8 scones Prep Time: 15 mins. Bake Time: 16 mins.
Whisk together flour, sugar, baking powder, cinnamon, ginger, allspice, cardamom, salt, & pepper.
Cut in butter with pastry blender or fork until pea-size pieces form with some larger bits.
Whisk together cream & eggs. Fold cream/egg mixture, grated carrots, & chopped walnuts into mixture until just combined.
On a lightly floured surface, gently knead dough a few times. Using your hands, form circle 3/4" thick.
Slice dough into 8 triangles & place on parchment paper-covered baking sheet. Brush lightly with heavy cream.
Bake at 400 degrees for 13-16 minutes, until scones are just turning golden around edges. Let cool.
Beat cream cheese until smooth. Add sugar & spices & beat until combined. Add milk and beat until smooth.
Make Cream Cheese Frosting
Drizzle scones with chai cream cheese frosting & sprinkle with additional grated carrots & chopped walnuts.
