Cheddar Cups with Avocado Feta Mousse

Cheddar Cups with Avocado Feta Mousse are the best ever party appetizer. The cheese cups require one ingredient & the entire appetizer is so easy to put together!

Makes:  12 cheddar cups Prep Time: 15 mins Cook Time: 10 mins

 Cheddar Cup Ingredients:

– 1 block (6 oz.) Cheddar Cheese, shredded

Mousse Filling & Baked Kale Ingredients:

Avocado Feta Mousse: – Avocados – Feta cheese – Lime juice – Milk – Black pepper

Baked Kale:  – Kale – Olive oil – Red pepper flakes – Salt

Pre-heat oven to 350 degrees & spray a muffin tin with cooking oil.

Prep Recipe

Shred your block of cheese. Freshly shredded will be much better than pre-shredded!

Make Cheddar Cups

On parchment paper or Silpat-lined baking sheet, scatter shredded cheddar in small circular mounds, spaced an inch+ apart.

Bake at 350 degrees for about 8-10 mind, when cheese is just turning golden.

Let sit for 30-60 seconds & then lift rounds with spatula & fit into muffin tins. Press down to form. Let cool before removing.

Places avocado, feta, lime juice, milk, & black pepper in a blender.

Make Mousse Filling

Process until a smooth mousse is formed.

Place kale in a bowl & toss together with olive oil, pepper flakes, & salt.

Make Baked Kale

Spoon or pipe avocado feta mousse into each cup & top with crumbled baked kale.
