Cherry Lime  Pop Tarts

Cherry Lime Pop Tarts are made with an easy cherry lime jam & a simple dough recipe. They'll have you falling in love with pop tarts all over again!

Makes: 7 pop tarts Prep Time: 30 mins Chill Time: 1 hour Bake Time: 45 mins

Add cherries, sugar, lime juice, & zest to a saucepan over high heat. Stir while mixture comes to a boil. Reduce heat to medium-low.

Let mixture simmer while occasionally stirring & mashing. Cook for 20-25 mins, until jam thickens and/or is at 220 degrees on a candy thermometer.

Remove from heat & transfer jam to a mason jar, seal, & place in fridge to cool completely.

Place flour, sugar, & salt in the bowl of a food processor and pulse to combine.

In a small bowl, lightly beat egg & mix in milk. Pour into food processor & pulse until dough just comes together.

Remove dough to floured surface & knead to bring together into smooth disc. Wrap in plastic wrap & chill dough for 30 mins.

Roll dough to about ⅛" thickness & cut out rectangles about 5" by 3 ¼". Chill for 30 mins. Spoon about a Tbsp of cherry lime jam to the center half of the rectangles.

Assemble Pop Tarts

Cover each with a remaining rectangle. Using a fork, crimp edges of each pop tart & cut a couple slits in the middles to let air escape.

Brush with egg wash & bake at 350 for 20 mins, until turning golden Let cool.

Add cherries & milk to blender & process until fairly smooth

Make Icing

Add confectioners' sugar to bowl & stir in 1/2 the cherry mixture. Add more 1 Tbsp at a time until desired consistency.

Once pop tarts are cooled, drizzle icing over the top & top with sprinkles.
