Chili Lime  Shrimp Tacos

Chili Lime Shrimp Tacos are topped with a strawberry, avocado, & mango salsa & will be your new favorite taco. They're easy to make & a fun way to eat the rainbow!

Makes:  4 servings Prep Time: 14 mins Cook Time: 10 mins Marinating Time: 20 mins

Ingredients:

– Medium shrimp – Chili powder – Lime juice – Olive oil – Feta cheese – Flour tortillas – Greek yogurt, for topping

– Mango – Strawberry – Avocado – Red onion – Black beans

Put  shrimp in a ziplock bag with chili powder, lime juice, & olive oil. Let marinate in fridge for 20 minutes.

Marinate Shrimp

While shrimp is marinating,  combine mango, strawberry, avocado, onion, & black beans. Toss to combine.

Make Salsa

Heat grill pan (or skillet) to medium heat & grill shrimp for 2-3 mins on each side, until pink. 

Cook Shrimp

Warm tortillas in oven or microwave.

Warm Tortillas

Top each tortilla with fruit salsa, about 5 shrimp, & feta. Top with Greek yogurt and additional lime juice.
