One-Pan  Chipotle Salmon

Not only is this one-pan creamy chipotle salmon absolutely delicious, it's also so incredibly easy to make and will barely leave any dirty disehes!

Makes:  4 servings Prep Time: 15 mins Cook Time: 15 mins


– Salmon – Salt & pepper – Unsalted butter – Chopped sun-dried tomatoes, plus oil – Finely chopped chipotle peppers – Diced onion – Minced garlic

– Low-sodium vegetable or chicken broth – Heavy cream – Adobo sauce (from chipotle peppers) – Baby spinach

Sprinkle both sides of salmon with salt & pepper.  In a large skillet, melt butter. Add salmon skin-side-up & cook for  4 mins. Flip & cook for another 4 mins. Remove to plate.

Cook Salmon

Add sun-dried tomatoes, oil, chipotles, & onion to pan & cook for 5 mins. Add garlic & cook for 2 mins, until garlic is fragrant & onions are translucent.

Continue Cooking

Add broth to pan & simmer, scraping up browned bit from bottom of the pan with a spatula.

 Pour cream into pan, followed by adobo sauce. Stir. Add spinach & cook for 30 seconds, until wilted. Add salmon back to pan to heat through, spooning sauce over the salmon.

Continue Cooking

Serve over brown rice, quinoa, cauliflower rice, or whatever you desire! Be sure to spoon extra sauce over the salmon when serving.
