What are Cloud Eggs?
Cloud eggs are eggs baked in meringue. To make, separate yolk & white, beat whites until stiff peaks form, create a hollow for yolk to rest, bake a bit, add in egg yolk, & finish baking.

Fold in any add-ons or spices you want. Here are some ideas: -Cheese -Meat: bacon, prosciutto, sausage, pancetta -Spices: red pepper flakes, everything bagel spice, herbs, garlic powder

Separate Eggs

Crack and separate all eggs, placing whites in a large bowl and yolks in 4 separate small bowls.

Whip Egg Whites

Using a hand mixer (or a whisk and a lot of arm strength), whip egg whites until stiff peaks form.

Fold in Add-ins

Fold in any add-ins/spices you want to use. I used chopped prosciutto, shredded cheese, chopped jalapeño, and chopped chives.

Form Meringue Mounds

Spoon egg white mixture into four equal-sized mounds on parchment paper-lined baking sheet. Push spoon down to make a deep well in the middle of each mound.

Bake and Add Yolk

Bake at 450 degrees for about 4 minutes. Remove from oven and add an egg yolk to each mound.

Bake for another 2-3 minutes, until egg yolks are set.
