Coconut Curry Chicken

-Cumin -Cinnamon -Cloves -Cardamom -Chili Powder -Salt & Pepper -Turmeric Chicken Breast

-Olive Oil -Onion -Garlic --Jalapeño Pepper -Coconut Milk -Worcestershire Sauce -Ginger -Basil -Cooked Brown Rice

Mix all spices (from cumin to turmeric) in small bowl. Place chicken in large bowl & sprinkle  spice mix over. Let sit for 30 mins.

Step 1

Heat 1 Tbsp oil in large skillet over medium-high. Add onion & jalapeño & cook for 3 mins. Add garlic & cook for 1 min, until fragrant. Remove from skillet & place in medium size bowl.

Step 2

Add 1 Tbsp oil to same skillet & add 1/2 of the chicken, spreading out to make sure not crowded. Cook for a few mins on each side to cook through & lightly brown.

Step 3

Remove chicken from skillet & add to the bowl of onion/jalapeño. Repeat with remaining chicken.

Step 4

Pour coconut milk into skillet. Cook on medium-high & stir until sauce thickens and starts bubbling. Mix in Worcestershire sauce.

Step 5

Add chicken & onion/jalapeño back into skillet, along with basil & ginger & cook for 2 mins.

Step 6

Serve basil chicken over rice. Spoon more coconut curry sauce over the top. Top with more basil if desired.

Step 7

You can easily adjust the spice level of this dish by adding more or less jalapeño and/or spice mixture. Your family will love this easy dinner!
