Coconut Doughnuts

These Coconut Doughnuts with Salted Caramel Icing are baked, easy to make, and a fun breakfast treat or tasty dessert.

Ingredients:

– 2 cups all-purpose flour – ¾ cup granulated sugar – 2 tsp baking powder – 1 tsp salt – 2 large eggs – ¾ cup whole milk – 2 tsp coconut extract – 3 Tbsp coconut oil (or unsalted butter), melted – ¾ cup coconut, divided – 1 batch Salted Caramel Icing (next slide) 

Salted Caramel Icing Ingredients:

– 2 Tbsp granulated sugar – 1 Tbsp water – 2 Tbsp cream – 1 tsp vanilla – ½ tsp salt – 6 Tbsp unsalted butter, room temp – ½ cup confectioners' sugar – 1 Tbsp whole milk

In a large bowl, whisk together flour, sugar, baking powder, and salt.

In a separate small bowl, lightly whisk eggs. Whisk milk, coconut extract, & melted coconut oil/butter into eggs, until combined.

Stir the wet ingredients into the dry ingredients, taking care not to over-mix. Gently fold in ½ cup coconut.

Fill each cavity in donut pan about ¾ of the way with batter.

Bake Doughnuts

Bake donuts for 8-10 minutes, until light & springy. Let cool in pan for a few mins & then remove to cool completely on wire rack.

In small saucepan over medium heat, stir together sugar & water. Let come to a simmer and let it simmer until it reaches a dark amber color.

Make Icing

Remove from heat & immediately stir in heavy cream, vanilla extract, & salt, until mixture is smooth. Remove to separate bowl & let cool completely.

Beat butter on medium speed until light & fluffy. Beat in confectioner's sugar, until fully combined. Beat milk into mixture & pour in cooled caramel sauce, until light & airy.

Toast remaining 1/4 cup coconut until golden. Frost donuts with salted caramel icing & immediately sprinkle with toasted coconut.
