Corned Beef Melts
Corned Beef Melts are the perfect solution to St. Patrick's Day leftovers. But they're so delicious, you'll want to make corned beef just so you can enjoy these sandwiches!

– 3 Tbsp unsalted butter, divded – 1 medium onion, thinly sliced – 1 Tbsp brown sugar – ¼ tsp salt – ¼ tsp pepper – 4 slices rye bread – 3 Tbsp grainy mustard – 4 slices provolone or Swiss cheese – 4 slices leftover corned beef
Add 1 Tbsp butter to large skillet over medium-low heat. Add onions & stir until well coated in butter.
After about 10 mins of cooking, stir in brown sugar. Coook for 20-40 mins, stirring every 5 mins, until onions are well caramelized. Add salt & pepper.
Spread 2 Tbsp butter on one side of slices of bread. Spread thin layer of dijon on other side of bread. Place 2 slices of bread bread butter-side-down on skillet over medium-low heat.
Place 2 slices cheese on each slice of bread. Top with corned beef slices & caramelized onions.
Top with the other slice of buttered bread. After cooking a few mins on one side, flip sandwich over. Cook until bread is toasted & cheese is melty.
