Corned Beef  Melts

Looking for something to do with that leftover corned beef? These Corned Beef Melts are made with caramelized onions & provolone cheese & are the most delicious sandwich. 

Makes:  2 sandwiches Prep Time: 2 mins Cook Time: 5 mins

Ingredients:

– Unsalted butter – Onion – Brown sugar – Salt & pepper – Rye bread – Grainy mustard – Provolone or Swiss cheese – Leftover corned beef

Add butter to large skillet over medium low. Add onions & stir until well coated in butter.

Caramelize Onions

When onions are turning transparent, stir in sugar. Continue cooking for 20-40 ,mins, stirring every 5 minutes, until onions are well caramelized. Stir in salt & pepper.

Spread remaining butter on 1 side of all slices of bread. Spread thin layer of dijon on the other sides. Place 2 slices of bread bread butter-side-down over medium-low heat.

Make Sandwiches

Place 2 slices cheese on each slice of bread.

Top with  corned beef slices & onions.

Top with the other slice of bread. And after cooking a few mins, flip sandwich over. Cook until bread is toasted & cheese is melty.
