Cranberry  Overnight Oats

Prep Cranberry Overnight Oats before going to bed & when you wake up, a deliciously satisfying & festive breakfast will be waiting for you!

Makes:  2 servings Prep Time: 10 mins (if using leftover cranberry sauce) Chill Time:  8 hours

Ingredients:

– Old-fashioned oats – Chia seeds – Greek yogurt – Milk (or dairy/dairy substitute) – Cinnamon – Cranberry sauce (leftover or recipe shown)

Cranberry Sauce:

– Fresh cranberries – Granulated sugar – Honey – Orange juice or apple cider – Water

This recipe is perfect for making with leftover cranberry sauce. But if you don't have any, you can follow my recipe to make it from scratch!

Combine cranberries, sugar, honey, juice, & water in saucepan over medium-high.

If Making Cranberry Sauce

Cook, stirring, until cranberries have burst & liquid is reducing, about 10 mins.

If Making Cranberry Sauce

Lower heat & simmer until sauce thickens & becomes syrupy, about 10 mins. Remove from heat & cool.

If Making Cranberry Sauce

Combine oats, chia seeds, Greek yogurt, milk, & cinnamon in a large bowl.

Prep Oat Mixture

Stir to combine.

Prep Oat Mixture

Layer oat mixture in two 8 oz. mason jars, alternating with cranberry sauce. Refrigerate overnight.
