Eggnog  Linzer  Cookies

Eggnog Linzer Cookies will be the hit of the holiday cookie platter! The eggnog shortbread cookies are made with a splash of eggnog and a delicious eggnog icing is sandwiched between the two cookies.

Makes:  8 cookies Prep Time: 40 mins Bake Time: 10 mins

Ingredients:

– Unsalted butter – Granulated sugar – Large egg yolk – Eggnog – All-purpose flour – Almond flour – Salt – Sprinkles, for decorating – Confectioners' sugar, for dusting

Eggnog Icing Ingredients:

– Confectioners' sugar – Eggnog

Beat together butter & sugar until light & fluffy, about 3 mins. Beat in egg yolk & eggnog.

Make Dough

In a separate large bowl, whisk together flour, almond flour, & salt.

Add flour mixture to wet mixture & mix until just combined, taking care not to over-mix.

Divide dough in half & pat each into a disc. Wrap dough in plastic wrap & place in fridge until firm, about 1 hour.

Chill Dough

On floured surface, roll disc of dough to 1/4" thick. Cut cookies with medium or large cookie cutter & put on parchment-lined baking sheet. Chill for 30 mins.

Cut Out Cookies

Roll second dough disk out & cut the same shapes. Use a smaller cookie cutter to make a cutout in the center of each. Chill for 30 mins.

Preheat oven to 350 degrees.

Heat Oven

Bake cookies for 8-10 mins, or until edges are turning golden. Let cool for 5 mins on pan, before transferring to rack to cool completely.

Bake Cookies

In a medium bowl, whisk together confectioners' sugar & eggnog until smooth.

Make Icing

Drizzle icing over the cookies with cutouts. Dip in bowl of sprinkles, icing side-down.

Decorate Cookies

Lift cookies and set right-side-up to dry.

Decorate Cookies

Sift confectioners' sugar over tops of cookies with cutouts. Turn other cookies flat side up & spread 1/2 tsp icing in center. Top with sugar-dusted cookies.
