Flank Steak Quesadillas
These Flank Steak Quesadillas with Gorgonzola are a major upgrade to quesadillas and incredibly easy to make for a simple weeknight dinner.
Makes: 4 servings Prep Time: 15 mins Cook Time: 15 mins Marinade Time: 3 hours
– Lime juice – Olive oil – Garlic – Chili powder – Cumin – Salt – Flank steak – Onion
– Salt & pepper – Jalapeño pepper – Flour tortillas – Gorgonzola cheese – Avocado, for topping
Tips for Cooking Flank Steak
1) Marinate it 2) Don't overcook it 3) Slice it against the grain
Add lime juice, olive oil, garlic, chili powder, cumin, & salt to a bag & place steak in bag. Place in fridge for at least 2 hours to marinate.
Heat grill pan or large cast iron pan until extremely hot & place steak on it. Grill for 3 mins on each side. Rotate for grill marks.
Remove steak to cutting board & let cool slightly. Slice flank steak in strips, being sure to cut against the grain.
Heat pan to medium & add olive oil. Add onions, salt, & pepper & cook for 5 mins. Add jalapeño & cook for 6-8 mins, until onions are browning.
Cook Onion & Peppers
Brush one side of all tortillas with olive oil & place oil-side down on pan. Sprinkle cheese & top with steak, onions & jalapeño, & more cheese.
Place another tortilla over the top, cook for one min, & flip & cook for two mins. Rotate tortillas halfway through for criss-cross grill marks.
Using a pizza cutter, slice quesadillas into four and serve with mashed or sliced avocado.

These steak quesadillas are a super easy dinner the whole family will love! Swap out gorgonzola for cheddar if preferred.
