Garlic Parmesan Mashed Potatoes

Have you ever wanted to take a classic mashed potatoes recipe and make it even more delicious? The addition of lots of garlic & parmesan cheese should do it! These Garlic Parmesan Mashed Potatoes are SO good!

Makes:  8 servings Prep Time: 10 mins Cook Time: 25 mins

Ingredients

– Potatoes: I prefer Yukon gold – Salt & pepper – Unsalted butter – Minced garlic – Whole milk – Heavy cream – Garlic powder – Grated parmesan cheese – Fresh chives or scallions: for garnish

Place potatoes in large pot & add enough cold water to cover potatoes. Add 1 Tbsp salt & bring water to a boil.

Boil Potatoes

Lower heat to a simmer & cook until potatoes are tender when pierced with fork, about 20 mins. Drain & return to pot.

When potatoes are almost done boiling, melt butter in small saucepan over medium heat. Add garlic & cook for 1-2 mins, until aromatic & just starting to brown.

Cook Garlic

Turn heat to low & add milk & cream to saucepan. Heat until hot, but not boiling.

Warm Milk

Mash potatoes with a masher until desired consistency is reached. Take care not to over-mash.

Add hot milk/cream mixture, garlic powder, salt & pepper to potatoes & stir to combine. Fold in parmesan cheese.

Serve mashed potatoes topped with chopped chives or scallions & more butter, if desired.
