Gingerbread Energy Balls

These no-bake Gingerbread Energy Balls have the flavor of freshly baked gingerbread, are packed with energy-boosting ingredients, and are quick and easy to make!

Makes:  12 energy balls Prep Time: 10 mins Chill Time: 30 mins

Ingredients:

– Pitted Medjool dates – Cashews (or nuts of your choice) – Old-fashioned oats – Ground ginger

– Ground cinnamon – Ground allspice – Ground nutmeg – Salt – Chia seeds – Molasses – Vanilla extract – Sprinkles, if desired

Put dates, nuts, & oats in the bowl of a food processor.

Make Mixture

Process until crumbly.

Make Mixture

Add ginger, cinnamon, allspice, nutmeg, salt, chia, molasses, & vanilla & process until  well-combined & sticky.

Make Mixture

Add sprinkles (if using) & pulse a couple times to combine.

Make Mixture

Scoop mixture out & form golf ball-sized balls. Place on parchment paper-lined baking sheet.

Form Balls

Chill for at least 30 minutes before enjoying.
