Gingerbread Rice Krispies Treats

These Gingerbread Rice Krispies Treats take the classic recipe & add lots of gingerbread flavor & a super cute look! They make a great addition to the holiday cookie platter.

Cook Time: 10 Min


– Unsalted butter – Mini marshmallows: you can substitute with full-size – Rice Krispies – Molasses – Vanilla extract – Ground ginger – Ground cinnamon – Ground allspice – Ground nutmeg – Salt – Mini M&Ms – Melted white chocolate

Lightly coat a 9x13" pan with cooking spray.

Step 1

In a large saucepan, melt butter over low heat.

Step 2

Once melted, add in marshmallows.

Step 3

Stir until marshmallows are completely melted.

Step 4

Remove saucepan from heat & add Rice Krispies to melted marshmallows. Add molasses, vanilla, ginger, cinnamon, allspice, nutmeg, & salt

Step 5

Gently stir mixture until cereal is completely coated in marshmallow.

Step 6

Spoon mixture into  pan & gently press down. I recommend using a lightly oiled rubber spatula.

Step 7

Let treats cool for 5 mins & use a lightly oiled cookie cutter to cut out shapes.

Step 8

Press remaining scraps together in pan & continue cutting shapes until all mixture is gone.

Step 9

Use mini M&Ms & white chocolate to decorate gingerbread men, if desired.

Step 10

These Gingerbread Rice Krispies Treats are fun to make with kids & are a super cute alternative to the typical Christmas cookie!
