Homemade Tagalongs

What's your favorite Girl Scout Cookie? I'm in love with Tagalongs, AKA Peanut Butter Patties. This copycat Tagalong cookie recipe is so easy to make at home!

Makes:  60 cookies Prep Time: 30 mins Bake Time: 10 mins

Ingredients:

– Unsalted butter – Granulated sugar – Egg – Vanilla extract – Salt – All-purpose flour – Creamy peanut butter – Confectioners' sugar – Milk chocolate (wafers or roughly chopped bars)

In the bowl of stand mixer or large bowl with hand mixer, cream together butter & sugar until light and fluffy, 3-4 mins.

Make Dough

Add egg, vanilla, & salt & beat until smooth.

Turn mixer to low & add flour. Mix until just incorporated, taking care not to over-mix.

Place dough on large piece of plastic wrap. Fold over to completely cover dough & roll the dough into a smooth log, about 2" in diameter. Chill for 2 hours.

Preheat oven to 350 degrees & line a baking sheet with parchment paper.

Prep Oven

Use a sharp knife to slice dough log into ¼"-thick rounds. Arrange cookies on prepared baking sheet about 1" apart.

Slice Dough

 Bake for 9-12 mins, until edges are just turning golden. Let cookies cool in pan for a couple mins before moving to wire racks to cool completely.

Bake Cookies

In bowl of stand mixer or in large bowl with hand mixer or spatula, combine peanut butter & confectioners' sugar & mix until well combined.

Make PB Filling

Spread a layer of peanut butter filling over each cooled shortbread cookie.

Put chocolate in double boiler & bring water to a boil. Stir chocolate with wooden spoon until evenly melted & smooth.

Melt Chocolate

Put peanut butter cookies in melted chocolate. Use two forks to flip to coat entirely with chocolate.

Coat Cookies

Remove & set on piece of waxed or parchment paper & let chocolate harden.

You can put cookies in fridge to speed up the process if you want.

These taste just like the Girl Scouts' Tagalong cookies with their layers of shortbread, peanut butter, & chocolate & will let you get your fix year-round!
