Hummus Breakfast Bowls

Hummus for breakfast? Yes! These Hummus Breakfast Bowls are packed with delicious ingredients and lots of protein that will keep you satisfied and energized!

Makes: 4 large bowls Prep Time: 20 mins Cook Time: 7 minutes

Hummus Ingredients:

– Tahini – Freshly squeezed lime juice – Extra-virgin olive oil – Salt & pepper – Cayenne – Chickpeas – Finely chopped parsley – Cold water

Bowl Ingredients:

– Eggs – Kale: I like Tuscan kale – Olive oil – Lemon juice – Crispy bacon – Feta cheese – Avocado – Lemon wedges

 Put tahini & lemon juice in food processor & blend for about 2 mins, until tahini is nice & creamy.

Make Hummus

Add extra-virgin olive oil, salt, pepper, & cayenne & blend to combine.

Add chickpeas to food processor & process for 2 mins until smooth.

Mix in parsley & add in cold water & blend until hummus is creamy.

Bring large pot of water to a boil. Carefully drop eggs into pot & bring water back to a boil.

Let eggs boil for 6-7 mins. Drain & place eggs in a bowl of ice cold water. Peel & slice.

Place kale in large bowl with olive oil & lemon juice. Using hands, gently massage kale for 2-3 mins to soften.

Massage Kale

Divide hummus between 4 bowls. Top each with eggs, kale, bacon, feta, & avocado. Add lemon wedge for garnish.
