Lamb Flatbread with Feta & Mint

Lamb Flatbread with Mint & Feta is easy to make with simple ingredients, but is filled with  delicious spring & summer flavors.

Makes:  2 flatbreads Prep Time: 15 mins Bake Time: 12 mins

Mix yeast & water in a large bowl and let rest for 2 mins.

Make Dough

Stir salt, sugar, & olive oil into the mixture. With a wooden spoon, mix in the flour.  Cover with a towel & let rise for 2 hours.

Melt butter & olive oil in skillet. Add leeks, scallions, salt & pepper. Cook for 5 mins, until leeks & scallions are soft.

Make Toppings

Put the leek/scallion mixture in a medium bowl & stir in the chopped mint & parsley.

Add ground lamb to skillet and cook breaking up with a spatula. Cook until browned, about 6 mins.

Roll dough out on floured surface into 2 pizzas. Lightly brush with olive oil.  Divide leek mixture, lamb, & feta across dough rounds. Add red pepper flakes & salt & pepper.

Assemble Flatbread

 Bake for about 12 mins, or until flatbreads are turning golden & getting crispy on the edges.

Bake Flatbread

Garnish with more fresh mint. Slice & serve!
