Lemon Cookie Dough Bars {No-Bake Dessert}

No-bake Lemon Cookie Dough Bars are packed with bright lemon flavors and are a melt-in-your-mouth delectable summer treat!

Put Oreo cookies in food processor.

Make Cookie Crust

Process until they turn into find crumbs. Pour in melted butter and pulse.

Press cookie crumbs into an even layer on bottom of a lightly oiled foil-lined 8x8 pan. Freeze for 30 mins.

Cream butter and sugar on medium speed until light and fluffy, 3-4 minutes.

Add vanilla, lemon zest, & salt & blend until combined. Mix in 3 Tbsp sprinkles.

Add flour to bowl until well combined. Add lemon juice & milk until dough comes together. Press cookie dough into an even layer over cookie crust.

Beat together butter & confectioners's sugar. Mix in vanilla & salt. Add a drop of yellow food coloring & mix to combine.

Make Buttercream

Spread buttercream over top of cookie dough & smooth evenly. Sprinkle additional sprinkles over top. Chill in fridge for at least 45 mins.

Assemble Bars

Remove bars from pan by lifting foil. Place on cutting board and using a sharp knife, slice into squares.
