Lucky Charms Ice Cream
Fun Dessert!
1 1/2 cups marshmallow fluff (store-bought or recipe on next slide)
2 cups heavy cream
6 large egg yolks
1/4 tsp salt
3/4 cup granulated sugar
1 1/4 cup whole milk
1 cup Lucky Charms, + 1 cup extra marshmallows
Ice Cream Ingredients
1/8 tsp cream of tartar
1 1/2 tsp vanilla extract
3/4 cup confectioners' sugar
1/8 tsp salt
1/2 cup corn syrup
1 large egg white
Fluff Ingredients
Infuse Milk
Pour Lucky Charms cereal & milk in bowl and place in the fridge for about 30 minutes.

Infuse Milk
Pour through fine mesh sieve over a medium saucepan, pressing with a spoon to extract as much milk into the saucepan as possible.

Make Ice Cream Base
Add sugar & salt to saucepan with milk & stir constantly, until the mixture it reaches point of simmer.

Lightly whisk yolks in a bowl. Once milk is simmering, slowly pour about half of it into the bowl with the egg yolks, whisking all the time.

Pour egg/milk mixture back into saucepan with the rest of the milk & w/ heat on low, stir until mixture thickens & coats back of spoon (about 170 degrees).

Make Ice Cream Base
Pour cream into separate large bowl. Strain the egg/milk mixture through a fine mesh sieve into the heavy cream, while whisking. Refrigerate for 4 hours.

Make Homemade Fluff
In stand mixer or with hand mixer, beat egg white, corn syrup, & salt on high speed for 4-5 minutes until mixture thickens & turns white.

Make Homemade Fluff
Beat in confectioners' sugar, vanilla, and cream of tartar on low speed, until combined. Keep in fridge until ready to use.

Process Ice Cream
When the mixture is chilled, process in ice cream maker. When almost done, add in fluff and extra cup of marshmallows.

Chill Ice Cream
Scoop ice cream into airtight containers and place in freezer for at least 6 hours.
