With Baileys Buttercream

Mint Macarons

Mint Macarons with Baileys Buttercream are a magically fun St. Patrick's Day party treat, but are also delicious any time of year!

Makes: 12 macarons Prep Time: 30 mins. Cook Time: 18 mins. Resting Time: 45 mins.


– 80 grams extra fine almond flour (~ ⅚ cup) – 85 grams confectioners' sugar (~ ⅜ cup) – 2-3 large eggs (60-64 grams), room temp. – ⅛ tsp cream of tartar – ⅛ tsp salt – 50 grams granulated sugar (~ ¼ cup) – ¼ tsp mint extract – ¼ tsp vanilla – 3 drops green food coloring – Gold powder, optional

Bailey's Buttercream Ingredients:

– ¼ cup (4 Tbsp) unsalted butter, room temp. – 1 cup confectioners' sugar – 2 tsp Baileys

In a large bowl, sift together almond flour & confectioners' sugar.

Make Batter

In bowl of an electric mixer with whisk attachment or in a large bowl with hand mixer, beat egg whites on medium speed until foamy. Add cream of tartar & salt.

Turn mixer to medium & while running, add in 1 Tbsp sugar at a time. Increase speed to high & beat until soft peaks form. Add mint & vanilla & continue beating until stiff peaks form.

Sift dry mix into egg whites. With rubber spatula, gently fold ingredients together, scraping sides & bottom of bowl & folding meringue up & over & pressing down.

Continue motion while turning bowl. As you mix, batter will begin to thin out. Keep folding until batter drops from the spatula like "molten lava"

Place pastry bag with large round tip in glass & fold over bag top. Dip a brush in food coloring & starting inside pastry tip, brush stroke of food coloring from tip to top of bag. Repeat 3 times.

Pipe Batter

Fill bag with batter. Pipe evenly sized rounds (2") onto parchment-lined baking sheets. Gently tap bottom of sheets on counter to eliminate air bubbles. Let sit for 45-60 mins. to dry out.

Pipe Batter

Bake macarons at 300 degrees on middle rack for 15-18 mins, until firm to the touch & risen to form a foot. Let macarons cool completely on baking sheets.

Bake Macarons

In the bowl of a stand mixer or in large bowl with hand mixer, beat butter until creamy. Slowly blend in the confectioner’s sugar. Mix in Baileys until combined.

Make Buttercream

Lightly brush gold powder over tops of macaron shells. Put buttercream in pastry bag & pipe 2 tsp on bottom of a shell. Place another shell on top & push together.
