Molasses  Ginger Cookies

Molasses Ginger Cookies are perfectly soft & chewy & packed with fall flavor. The Sweet Pumpkin Dip makes the perfect cookie accompaniment!

Makes:  2 dozen cookies Prep Time: 20 mins Bake Time: 10 minutes

Cookie Ingredients:

– All-purpose flour – Ground ginger – Ground cinnamon – Baking soda – Ground cloves – Salt

– Unsalted butter – Granulated sugar – Egg – Molasses – Water

Pumpkin Dip Ingredients:

– Light cream cheese – Pumpkin puree – Confectioners' sugar – Cinnamon – Ground ginger

Whisk together flour, ginger, baking soda, cinnamon, cloves, & salt.

Make Dough

Cream together butter & 1 cup sugar until light and fluffy, about 2-3 minutes.

Make Dough

Add egg & mix until combined. Beat in molasses & water.

Mix dry ingredients into wet ingredients until just blended, taking care not to over-mix.

Make Dough

Form balls with 2 Tbsp of dough. Roll in sugar & place on baking sheet  2 inches apart. Use your hand to gently flatten dough balls a bit.

Form Cookies

Bake for 8-10 minutes until cookies are just turning golden around edges but are still soft.

Bake Cookies

Beat cream cheese & pumpkin puree until light and fluffy 2-3 minutes.

Make Pumpkin Dip

Mix in confectioners' sugar, cinnamon, & ginger. Chill for 30 minutes.
