Did you know you can make the easiest cookies ever with muffin mix? This recipe only uses 4 ingredients & you can use any flavor mix for the perfect cookies!

What Kind of Muffin Mix?

You can use any flavor muffin mix you want! Here are the sizes I recommend for this recipe: – 6.5 oz. bags (Betty Crocker) - two bags required for full recipe – 14.75 oz. box (Betty Crocker) – 18.25 oz. box (Krusteaz)

Preheat oven to 350 degrees & line 2 baking sheets with parchment paper or Silpats.

Step 1

In bowl of a stand mixer or in large bowl with a hand mixer, cream butter until light & fluffy, 2-3 mins.

Step 2

Mix egg & vanilla extract into butter (don't worry if your mixture looks a little runny).

Step 3

Add muffin mix to the butter mixture & mix until just combined- don't over-mix.

Step 4

Scoop about 2 Tbsp cookie dough (I use a #40 cookie scoop) onto prepared baking sheets.

Step 5

Bake for 11-13 mins, until cookies are just turning golden around edges, but are still soft.

Step 6

Let cookies cool in pan for a couple mins before moving to wire racks to cool completely.

Step 7

These Cookies with Muffin Mix are so easy to make & come out perfectly soft & delicious every time!


Have a box of pancake mix instead? No problem; you can make cookies with pancake mix, too! They're flatter & crispier, but so delicious!
