Pancake Mix Crepes

Want to make the easiest crepes ever? Just use pancake mix! These Pancake Mix Crepes only require a few ingredients and are the perfect weekend breakfast!

Ingredients:

– Pancake mix – Eggs – Milk – Vanilla – Butter

What's the Difference Between Crepe & Pancake Mix?

The major difference is that pancake mix generally includes a leavening agent in it, like baking powder (because you want pancakes to rise while cooking, but crepes are flat). However, this won't make much of a difference when it comes to crepe making!

What Kind of Pancake Mix to Use?

You can use any brand of pancake mix for these! I've tested them with both Annie's Organic and Bisquick, but you can also use Aunt Jemima (Pearl Mill), Krusteaz, Hungry Jack, & more.

Place pancake mix, milk, eggs, vanilla, & melted butter in blender.

Process until smooth. If possible, let mixture rest for at least 30 minutes.

Place 7 or 8" nonstick skillet over medium. Coat with a bit of butter. Pour about ¼ cup batter in pan & tilt & swirl pan until batter evenly coats bottom.

Let cook for 1-1 ½ mins until crepe is turning golden on bottom & edges are pulling away from pan. Either use your fingers or a spatula to pull edges up & when ready, flip.

Make Crepes

Cook for another minute before removing crepe from pan to a plate. Continue with remaining batter.

I love adding ham and cheese to a crepe and popping it back in the pan to warm until the cheese gets melty.

But you can also serve with just a little maple syrup or the filling of your choice.
