Pancake Mix Donuts

Did you know you can make way more with a box of pancake mix than just pancakes? These Pancake Mix Donuts are SO easy to make with just a few ingredients!

Can you make donuts with pancake mix?

Yes, you can! Most pancake mixes are simply made up of flour, baking powder, sugar, and salt, so you have 3 ingredients in one. (I say 3 because I recommend adding more sugar!)

Using pancake mix to make donuts doesn't make baking them that much easier, but it does cut down on a couple ingredients and is a fun use for the mix!

Ingredients:

– Pancake mix – Granulated sugar – Eggs – Whole milk – Melted unsalted butter – Vanilla extract – Mini chocolate chips – Icing (recipe provided), optional – Sprinkles, optional

Icing Ingredients:

– Confectioners' sugar – Milk – Vanilla extract

Preheat oven to 325 degrees & spray a donut pan with cooking spray.

Prep Recipe

In a large bowl, whisk together pancake mix & sugar.

Make Batter

In a small bowl, lightly whisk eggs. Whisk milk, melted butter, & vanilla into eggs, until combined.

Stir wet ingredients into dry ingredients, taking care not to over-mix. Gently fold in chocolate chips.

Fill each cavity in donut pan ¾ of the way full. I recommend putting batter in a plastic bag & cutting off the corner to pipe it into pan.

Fill Pan

Bake donuts for 9-11 mins, until light & springy to the touch. Let cool in the pan for a few mins & then move to wire rack to cool completely.

Bake Donuts

In a medium bowl, whisk confectioners' sugar, 2 Tbsp milk, & vanilla together until well combined. Add more milk for thinner icing.

Make Icing

When doughnuts are cooled, dip upside down into icing to coat the tops. Add sprinkles or topping of choice.
