Panko Crusted Chicken

-Chicken Breasts -Unsalted Butter -Panko -Garlic Powder -Paprika -Dried Parsley -Salt & Pepper

-Mayonnaise -Dijon Mustard -Parsley: optional -Fresh Lemon: optional

slice each chicken breast in 1/2 lengthwise to create two thin fillets. Place each on a cutting board, cover with plastic wrap, & use a meat tenderizer to pound until each filet is about ½" thick.

Step 1

Preheat oven to 400 & set a baking rack over a foil or parchment paper covered baking sheet. Lightly brush rack with cooking oil.

Step 2

Melt butter in medium skillet over medium heat. Add panko.

Step 3

Stirring, cook until golden brown, about 5 mins.

Step 4

Transfer panko to shallow bowl & mix with garlic powder, paprika, dried parsley, ½ tsp salt, & ½ tsp pepper.

Step 5

In a small bowl, mix together mayonnaise & dijon mustard.

Step 6

Sprinkle ½ tsp salt & ½ tsp pepper over both sides of chicken & brush both sides with mayo mixture.

Step 7

Dredge each breast in panko mixture, pressing down to adhere to chicken evenly. Place chicken breasts on prepared wire rack.

Step 8

Bake for 15-22 mins, until internal temperature reaches 165 degrees. Serve with parsley & lemon, if desired.

Step 9

When you toast the panko ahead of time & adhere it to the chicken with mayo & mustard, your panko crusted chicken comes out crispy & moist every time!
