Pioneer  Woman  Meatloaf

Meatloaf doesn't always get a lot of love. But The Pioneer Woman's meatloaf will certainly change that. This meatloaf is covered in bacon and a delicious brown sugar ketchup sauce.

Makes:  8 servings Prep Time: 25 mins Baking Time: 45 mins


– Whole milk – White bread – Ground beef – Eggs – Parmesan cheese – Salt – Black pepper – Parsley – Bacon – Brown Sugar Ketchup Sauce

Sauce Ingredients:

– Ketchup – Brown sugar – Mustard – Tabasco sauce

In a large mixing bowl, pour milk over bread slices & allow to soak for 2-3 minutes.

Make Mixture

Add ground beef, egg, parmesan, salt, black pepper, & parsley to the bread in the bowl.

Make Mixture

Using clean hands, mix the ingredients together.

Make Mixture

Form the mixture into a loaf & place on a broiler pan with foil-lined on the bottom.

Form Meatloaf

Neatly arrange slices of bacon over the top, making sure to tuck the pieces under meatloaf.

Arrange Bacon

Pour & spread 1/3 of the sauce over meatloaf. Bake at 350 for 45 mins, until edges are browned.

Bake Meatloaf

Pour another 1/3 of the sauce over top of meatloaf & bake for an additional 15 mins.

Finish Meatloaf

This bacon meatloaf is easy enough to make for a weeknight dinner & also provides lots of yummy leftovers!
