Pork Bolognese

Easy and Impressive!

Ingredients

– Olive oil – Diced pancetta – Onion – Carrots – Celery stalks – Garlic – Ground pork – Tomato paste – Dry red wine (can substitute with beef broth)

– Whole peeled tomatoes  – Fresh thyme – Parmesan cheese rind (optional) – Whole milk – Salt & pepper – Tagliatelle (or thick pasta of your choice) – Parmesan  – Basil

Add olive oil to a dutch oven over medium heat. When hot, add pancetta, onion, carrot, & celery & cook until they begin to soften & brown, 5 mins. Add garlic & cook until fragrant, one min.

Step 1

Add pork to saucepan & cook while breaking up with wooden spoon, about 5 mins, until meat is starting to brown.

Step 2

Add wine & scrape up brown bits on the bottom of pan. Simmer for 5 mins to reduce. Stir in tomato paste & cook for one min.

Step 3

Add tomatoes, crushing them as you do. Stir in thyme & parm rind, if using. Bring to a simmer & reduce heat to low. Cover saucepan & let simmer for 2 hours, stirring occasionally, until sauce is thickened.

Step 4

When sauce is almost done cooking, bring large pot of salted water to a boil & cook pasta according to directions. Drain.

Step 5

Remove parm rind & thyme. Stir milk in & and let simmer for another 5 mins. Taste sauce & add salt & pepper accordingly.

Step 6

Serve pork bolognese over the pasta. Top with grated parmesan & chopped basil, if desired.
