Pumpkin Snickerdoodles

The only thing better than traditional snickerdoodles are pumpkin snickerdoodles! These cookies are soft and moist and filled with delicious fall flavors!

Makes:  2 dozen Prep Time: 20 mins Baking Time: 10 mins

Ingredients:

– Unsalted butter – Pumpkin puree – Granulated sugar – Egg – All-purpose flour – Cream of tartar – Baking powder – Salt – Cinnamon

Cream together butter, sugar, & pumpkin puree on medium speed for about 3 mins.

Make Dough

Beat egg into the mixture (don't worry if mixture looks a little curdle-y).

In a separate bowl whisk flour, cream of tartar, baking powder, & salt together.

Mix dry ingredients into wet ones in two separate batches, until completely combined, taking care not to over-mix. Chill dough for 1 hour.

Preheat oven to 400 degrees & line two baking sheets with parchment paper or Silpats.

Prep Oven

On a plate, mix together 1 ½ Tbsp sugar & 1 Tbsp cinnamon together.

Coat Cookies

Using about 1 Tbsp dough at a time, roll dough into balls.

Place balls on cookie sheet with about an inch of space between them.

Bake for about 10 mins., until cookies are fully baked, but still soft. Let cool.
