Red Skin Mashed Potatoes

Do you dream of the perfect mashed potatoes? Red Skin Mashed Potatoes are buttery, garlicky, & easy to make. Leave the skins on for great texture & flavor!

Makes:  8 servings Prep Time: 10 mins Cook Time: 25 mins

Ingredients

– Unpeeled red potatoes – Unsalted butter – Minced garlic – Whole milk – Heavy cream – Fresh chives

Place potatoes in large pot & add enough cold water to cover potatoes. Add 1 Tbsp salt & bring water to a boil.

Boil Potatoes

Lower heat to a simmer & cook until potatoes are tender when pierced with fork, about 20 mins. Drain & set aside.

Drain Potatoes

Return pot to medium-low heat & melt 2 Tbsp butter. Add garlic & cook for 1-2 mins, until aromatic, but not browning too much.

Sauté Garlic

Combine milk & cream & heat in a small saucepan over low heat or heat in microwave. Heat until hot, but not boiling.

Heat Milk/Cream

Return potatoes to pot & mash with a potato masher until desired consistency is reached. Take care not to overmash.

Mash Potatoes

Add remaining butter, hot milk/cream mixture, ½ tsp salt, and ½ tsp pepper and stir to combine.

Finish

Serve with chopped scallions or chives & an additional pat of butter, if desired.
