Shrimp Crepes

These easy-to-make crepes are filled with a creamy shrimp sauce & make the perfect brunch party entree or weeknight dinner!

Makes:  6 crepes Prep Time: 15 mins Cook Time: 20 mins

Crepe Ingredients:

– All-purpose flour – Granulated sugar – Garlic powder – Paprika – Cayenne – Salt and pepper – Whole milk – Eggs – Melted unsalted butter

Shrimp Ingredients:

– Unsalted butter – Medium shrimp, peeled and deveined with tails removed – Salt & pepper – Minced garlic – All-purpose flour – Dry white wine or chix broth – Lemon juice & zest – Heavy cream – Finely chopped basil

Place flour, sugar, garlic powder, paprika, cayenne, salt, pepper, milk, eggs, & melted butter in blender.

Make Crepes

Process until smooth and let mixture rest for at least 30 minutes (you can skip this if you're in a rush).

Place 10-inch nonstick skillet over medium heat & coat with butter. Pour ⅓ cup batter in pan & gently tilt & swirl pan until batter evenly coats the bottom.

Let cook for 1 ½-2 mins until crepe is turning golden on bottom & edges are pulling away from pan. Either use fingers or a spatula to pull edges up & flip. Cook for another min.

Remove crepe from pan to a plate. Keep warm. Repeat with remaining batter, adding a little buter to pan each time.

Add butter to large skillet over medium heat. Add shrimp in single layer & sprinkle with salt & pepper.

When shrimp start turning pink (about 2 mins), flip & cook another min, until opaque. Remove to a plate or bowl & set aside.

Wipe skillet out & add butter over medium-low heat. Add garlic. Cook for about 1 min, while whisking, until garlic is fragrant.

Make Sauce

Add flour & whisk to combine into a paste. Let cook for 1 min.

Stir in wine, lemon zest, & juice & cook for 1 min. Slowly add cream while whisking. Let cook for 2-3 mins to thicken. Stir in salt & pepper.

Add shrimp to sauce & toss to combine.

Fold a crepe in half & top with shrimp in cream sauce. 

Assemble  Crepes

Fold again & drizzle more sauce over the top. Add basil & extra lemon zest.
