– Unsalted butter– Medium shrimp, peeled and deveined with tails removed– Salt & pepper– Minced garlic– All-purpose flour– Dry white wine or chix broth– Lemon juice & zest– Heavy cream– Finely chopped basil
Place 10-inch nonstick skillet over medium heat & coat with butter. Pour ⅓ cup batter in pan & gently tilt & swirl pan until batter evenly coats the bottom.
Let cook for 1 ½-2 mins until crepe is turning golden on bottom & edges are pulling away from pan. Either use fingers or a spatula to pull edges up & flip. Cook for another min.
