Shrimp  Scampi  Pizza

With a super thin crust, a healthy dose of garlic and lemon juice, salty feta, and plenty of shrimp, you'll likely find yourself craving this Shrimp Scampi Pizza instead of a bowl of pasta!

Makes:  4 servings Prep Time: 25 mins Baking Time: 15 mins

Ingredients:

– Butter – Olive oil – Garlic – Red hot pepper flakes – Shrimp (I use XL) – Lemon juice – White wine – Parsley – Whole wheat dough (⅓ of recipe provided or store-bought) – Feta cheese – Parmesan cheese

Pizza Dough Ingredients:

– Active dry yeast – Lukewarm water – Salt – Honey – Extra-virgin olive oil – Whole wheat flour – All-purpose flour

In a large bowl, combine yeast & water. Let sit for 3 mins. Stir in salt, honey, & olive oil.

Make Dough

Using a wooden spoon, stir in whole wheat & all-purpose flour until just blended.

Cover bowl with a towel & set aside at room temp. for about 2 hours, to rise.

Let Dough Rise

Melt butter & olive oil in large skillet over medium. Add garlic & cook for 1-2 mins. Add red pepper flakes & cook for 30 seconds.

Cook Shrimp

Add shrimp in even layer & season with salt & pepper. When shrimp start turning pink, flip & cook another min. Remove to bowl & set aside.

Cook Shrimp

Add lemon juice & wine to skillet & sprinkle in parsley. Let sauce cook for a few minutes to reduce a bit.

Make Sauce

On lightly floured surface, roll dough into thin 12-inch round. Transfer to foil-covered pan. Brush lightly with lemon/parsley mixture.

Roll Dough Out

Sprinkle feta cheese & parmesan over the pizza & top with the shrimp.

Add Toppings

Bake for about 15 mins until crust is browninf & cheese is melting. Top with chopped parsley, slice, & serve.
