Do you love grabbing Starbucks Egg Bites on a busy morning? With this easy copycat recipe,  you can make both kale and mushroom and bacon and gruyere egg bites at home!

Makes:  12 egg bites Prep Time: 10 mins Cook Time: 70 mins

What's special about Starbucks' egg bites?

Starbucks Egg Bites are made with cottage cheese & other add-in ingredients. They are also cooked via the sous vide method, which means they're cooked under vacuum slowly & at a low temp. Since most households don't have a sous vide machine, I have an alternative way to cook these egg bites that turns out just as delicious & velvety!

Ingredients:

– 2% cottage cheese – Large eggs – Shredded Monterey Jack cheese – Shredded Swiss cheese – Dried parsley – Garlic powder – Salt and black pepper – Hot sauce – Finely diced portobello mushrooms – Finely chopped kale

Preheat oven to 200 degrees & spray a 12-cavity nonstick muffin tin with cooking spray.

Prep Recipe

Put cottage cheese, eggs, cheeses, parsley, garlic powder, salt & pepper, & hot sauce in blender.

Blend Ingredients

Process until smooth.

Blend Ingredients

Pour mixture into muffin tin, filling almost to top (egg bites won't rise much). Top evenly with chopped mushrooms & kale.

Pour Mixture

Place in oven & cook for 70-75 mins, until egg bites are set in the middle & are starting to turn golden.

Bake

Let rest for a couple minutes & then lightly run knife along the edge of each egg bite to remove from tin.

These copycat Starbucks egg bites make the perfect nutritious on-the-go breakfast! And they taste just like what you get at the coffee shop!

Enjoy!!

Follow the same recipe, but omit  parsley & garlic powder & use ⅓ cup of Gruyere cheese instead of Swiss. Top with small pieces of cooked bacon (from about 4 slices).
