Fluff is essentially a marshmallow spread that tastes like marshmallows, but can be used to make sandwiches, fill cookies, top cupcakes, & more. It can be purchased in grocery stores, but is also easy to make at home!

Place water, sugar, & corn syrup in medium saucepan over medium-high heat. Stir to combine.

Make Syrup

Let sit on heat (without stirring) until mixture reaches 240°F on a candy thermometer, 10-15 mins.

Make Syrup

While syrup is heating, place egg whites in bowl of a stand mixer with whisk attachment. Beat on medium until egg whites are foamy.

Mix Egg Whites

Add cream of tartar & salt & increase mixer speed to high, continuing to beat until soft peaks form.

Once syrup is at temp, turn  mixer to low & pour syrup into egg whites. Turn speed to high & mix for 5-6 mins, until it fluffs up & is glossy.
