Strawberry Shortcake Cheesecake Bars

Strawberry Shortcake Cheesecake Bars are packed with fresh strawberries and Oreo cookies and are a delicious summer dessert perfect for BBQs or summer parties.

Makes: 16 bars Prep Time: 40 mins. Cook Time: 40 mins. Chill Time: 3 hours


– Cookie crust (next slide) - 12 large strawberries – 16 oz. cream cheese, softened – ½ cup sugar – 2 Tbsp flour – ¼ tsp salt – 1 tsp vanilla – 2 eggs – 12 Strawberry Shortcake Oreo Cookies, divided

Cookie Crust  Ingredients:

– 20 Strawberry Shortcake Oreo Cookies – 3 Tbsp unsalted butter, melted

Put Oreos in food processor & blend until they turn to crumbs. Pour in melted butter & pulse until well blended.

Make Cookie Crust

Put cookie mixture into 8" baking pan covered in foil and coated in cooking spray & press into even layer on bottom of pan. Bake for 10 mins at 325.

Place strawberries in blender or food processor & process until pureed. You should have about ¾ cup of strawberry puree.

Make Batter

In the bowl of stand mixer  with paddle or in large bowl with hand mixer, beat cream cheese on medium speed for 1 min, until fluffy.

Add sugar, flour, salt & vanilla & beat until smooth. Add eggs, one at a time, beating after each until smooth. Mix in strawberry puree.

Pour batter over crust. Crumble about 8 Strawberry Shortcake Oreo Cookies & sprinkle them over the top of the cheesecake filling.

Fill Crust

Bake for about 35-40 mins at 325, until edges are turning golden % filling is set, but still a little jiggly in the middle. Cool & chill in fridge for at least 2 hours.

Bake & Chill

Remove from pan. Crumble remaining four Oreo Cookies & top cheesecake with them before slicing into squares & serving.

Finish & Slice

These tasty cheesecake squares are a little taste of summer (and taste like Good Humor strawberry shortcake ice cream bars!)
