Pre-heat oven to 400 degrees and lightly grease a 12-cavity mini muffin tin.
Place grated sweet potato and grated cheese in a bowl and mix together. Spoon mixture into the bottom of muffin tin cavities and lightly press down with your fingers.
Bake at 400 degrees for 7 minutes. Remove from oven and lower heat to 350 degrees.
Place a few pieces of diced ham over the sweet potato/cheese.
Crack eggs in a small bowl and whisk together with chopped parsley (if you're making these for yourself, add in salt and pepper here, too).
Pour egg mixture evenly into each muffin tin.
Bake at 350 degrees for 8-10 minutes, until eggs are set.
Let cool slightly in pan before removing to cool completely. Serve immediately or keep in fridge.
