Ingredients

  • 1 cup grated sweet potato (about 1 sweet potato)
  • ¼ cup grated cheddar cheese
  • 3 Tbsp diced ham
  • 4 Eggland's Best large eggs
  • 1 tsp chopped parsley

Instructions

  • Pre-heat oven to 400 degrees and lightly grease a 12-cavity mini muffin tin.
  • Place grated sweet potato and grated cheese in a bowl and mix together. Spoon mixture into the bottom of muffin tin cavities and lightly press down with your fingers.
  • Bake at 400 degrees for 7 minutes. Remove from oven and lower heat to 350 degrees.
  • Place a few pieces of diced ham over the sweet potato/cheese.
  • Crack eggs in a small bowl and whisk together with chopped parsley (if you're making these for yourself, add in salt and pepper here, too).
  • Pour egg mixture evenly into each muffin tin.
  • Bake at 350 degrees for 8-10 minutes, until eggs are set.
  • Let cool slightly in pan before removing to cool completely. Serve immediately or keep in fridge.
