Raspberry Vodka Lemonade

Made with homemade raspberry simple syrup, freshly squeezed lemon juice, and vodka, this refreshing Raspberry Vodka Lemonade will be your new favorite summer cocktail!

Ingredients

  • Ice
  • 2 oz. freshly squeezed lemon juice
  • 3 oz. water
  • 2 oz. raspberry simple syrup
  • 1 ½ oz. vodka
  • Fresh raspberries, for garnish

Raspberry Simple Syrup

  • 1 cup water
  • 1 cup granulated sugar
  • 1 cup fresh raspberries

Instructions

  • In a shaker filled with ice, combine lemon juice, water, raspberry simple syrup, and vodka. Shake well.
  • Pour cocktail into two glasses filled with ice. Garnish with fresh raspberries and a lemon wedge or slice.

Raspberry Simple Syrup

  • Put sugar, water, and raspberries in a medium-size saucepan and bring mixture to a boil. Once boiling, lower heat and let simmer for about 10 minutes, until mixture has thickened a bit.
  • Strain mixture into a bowl, being sure to press down on the berries to extract as much juice as possible.
  • Keep syrup in bowl or pour into a mason jar and place in fridge to cool completely before using. Syrup will continue to thicken as it cools.

Notes

  • Feel free to taste and adjust ingredients based on your personal preferences (add more vodka for a stronger drink, more syrup for a sweeter drink, etc.).
  • Raspberry simple syrup recipe should make about 6 cocktails.

  • To make this into a pitcher cocktail (5 servings), I recommend the following:
    • 1 batch raspberry simple syrup
    • 1 ¼ cups lemon juice
    • 2 cups water
    • ¾ cup-1 cup vodka (depending on how strong you want it)
