In a large bowl, mix together oats, wheat germ, flaxseed, dried pineapple, almonds, and coconut flakes.
Pour coconut milk into the mixture and stir. Cover bowl with plastic wrap and place in fridge for at least four hours, but ideally overnight.
Before serving, stir in Greek yogurt, and ⅓ cup pineapple juice. If you like your bircher muesli a bit thinner, add remaining pineapple juice in. If you're eating museli over multiple days, you may want to stir a little more juice in immediately before serving.
