Pre-heat oven to 350 degrees
Whisk flour, baking powder, and salt together in a medium bowl. Set aside
Cream butter and sugar in the bowl of a stand mixer until light and fluffy.
Beat in the egg and vanilla, being sure to scrape down the sides of the bowl.
Slowly mix in the flour mixture until just combined.
Place the dough in a ball onto a cookie sheet lined with parchment paper and roll it out into a rectangle, about ⅛-inch thick.
Bake for 10-12 minutes at 350 degrees. Let the cookie cool slightly.
Put Sugar Cookie Candy Melts in a microwave-safe bowl and melt according to package directions.
Pour the candy melts onto the slightly cooled cookie and spread to cover the entire surface.
Sprinkle other wintry or holiday-themed sprinkles over the top and sprinkles marshmallows all over. Let the candy melts cool and harden.
Break into pieces into bark-like pieces.
Store in airtight container.
