Coconut Candy Cane Truffles

Ingredients

  • 2 cups shredded coconut
  • ¼ cup coconut oil (liquid)
  • ¼ cup light coconut milk
  • ½ tsp vanilla extract
  • Pinch salt
  • 10 oz. Wilton Candy Cane Candy Melts (see notes for alternatives)
  • 2 candy canes, crushed

Instructions

  • In a medium bowl, combine coconut, coconut oil, light coconut milk, vanilla extract, and salt. Stir all the ingredients together until well combined
  • Roll the mixture into golf ball-sized balls and place them on a parchment paper-lined baking sheet. Place in the fridge for about 20 minutes to let them harden a bit.
  • Place candy melts in a bowl and place in microwave. Heat at 50% power for about 1 minute. Remove from microwave and stir. Heat for another 30 seconds, remove from microwave and stir. Repeat until completely melted. If using vanilla candy melts or white chocolate, melt using the same process and then stir in peppermint extract.
  • Place coconut balls into the bowl with the candy melts and using a fork, roll around to completely coat. Remove with a fork and place balls back on the parchment paper-lined baking sheet.
  • Sprinkle crushed candy canes over the top (work quickly to sprinkle on candy canes before candy melts harden).

Notes

  • If you can't find Candy Cane candy melts, you can use vanilla candy melts with ¼ tsp peppermint extract added. Alternatively, you can use white chocolate with ¼ tsp peppermint extract added.
